DAL BUKHARA

Hi guys I am back after long.

Today's Craving


My today's craving is Dal Bukhara , a famous dal served in ITC bukhara.


Ingredients,

2 tbsp big ginger garlic paste.
2 tsp Garam masala
250 g black urad dal whole
100 gms butter
100 ml  cream
Tomato puree of 4 tomatoes
red chilli powder 1 tbsp
ginger strips

Method

Soak the dal over night, drain water wash it, put it in a pressure cooker, boil dal upto 7 whistles
.
 Now open the cooker , if you see dal is too thick add some warm water. add the tomato puree.
ginger garlic paste, garam masala, red chilli powder and butter, salt if required.

Keep stirring the dal after some time add cream and keep stirring. keep stirring till one hour until the dal has a thick consistency and it cooks well.


after that garnish it with cream and ginger strips have it with hot parathas.

Besan k Ladoo this diwali

My Today's craving is Besan k Ladoo


Ingredients

1)  2 cups besan
2) 1 cup ghee
3) sugar or sugarfree as per your taste
4) elaichi powder
5) chopped cashew and almond


Method

In a pan add ghee and then mix besan stir it until golden brown and cooked, now add sugar powder or sugar free. add very little water approx 1 cup add all
the dry fruits and elaichi powder before adding water add kesar if u wish.  mix it well and let it cool.
After that take some ghee in your hands rub it and make ladoos from the mixture.

MOONG DAL CHILA



Todays' craving


My todays's craving is Moong dal Chila



Ingredients

1) two cups moong dal
2) 1 tbsp ginger garlic paste
3) 1 tsp cuming powder
4) chopped green chillies
5) pinch asafoetida (hing)
6) 1 chopped onion
7) red chilli powder
8) salt to taste
9) garam masala 1 small tsp


Method

Soak moong dal for 3 hrs, make a paste mix all the mentioned ingredients, make a thick batter
take a non stick pan and pour oil and put the batter in the pan in round
shape like pancakes cook it well and serve with mint chutney.

A great snack for tiffin or breakfast quick and easy.

Kacchey keley k Pakode

Today's Craving



My today's craving is Keley K Pakode 



Ingredients :

1) Kachhey keley 4
2) Onion 1
3) Dhania powder 1 tsp
4) Garam Masala 1 tsp
5) Ajwain  a pinch
6) Kalonji a Pinch
7) Besan 2 tbsp
8) Suji 1 full tbsp
9) Green Chilli chopped
10) Salt


Method:

Boil the kachhey keley in cooker, let it cool chop onions , mash the bananas, add ajwain, green chillies and kalongi, salt. add suji besan and mash it well. 

Now make small balls of the mixture and fry its all ready serve it with ketchup or mint chutney.

Baked Pomfret



Today's Craving


My todays craving is Baked Pomfret

Whole Pomfret as required.

You may also use Hilsa or Ilish.


Ingredients:

1) Dhania Powder
2) Ginger Garlic paste.
3) Salt
4) Turmeric
5) Red chilli powder
6) Coriander Leaves
7) Garlic cloves around 7-8
8) Grated Coconut.
9) Tamarind
10) Green Chillies.

Marinate the fish properly with ginger garlic paste, salt , turmeric red chilli powder and dhania powder and salt for 1 hr

Make a paste of Coriander , coconut ,garlic, chilli and tamarind add salt in the paste.
Stuff the fish with the paste and grill it in your microwave for around half and hour. brush it with oil before grilling and keep checking the tenderness of the meat.

Once cooked serve hot. squeeze some lime juice on top.

Malaidar Kela and Bread Kofta

My today's craving is , Malaidar Kela and Bread Kofta















Ingredients ( for Kofta)

1) Bread 1-2 slice
2) Raw banana (kachey kele) 3
3) Besan upto 2 tbsp
4) Potato boiled one
5)Onion chopped one
6) Dhania powder
7) Garam Masala
8) Green chillies
9) Kalongi
9) Ajwain
10) Tumeric
11) Red Chilli powder
12) Salt , oil

Boil the bananas, now mix all the above ingredients in the banana make a paste do not add water. Make round balls and fry like pakodas.

Take out the fried balls and keep aside.

Now will make the gravy.

Ingredients ( for Gravy)

1) Onion large
2) Tomatoes 2
3) Ginger garlic paste 1 tsp each.
4) Cashew handful
5) Cream two tbsp
6) Garam Masala
7) Jeera and Dhaniya Powder
6) Red chilli powder
7) Turmeric
8) Roasted Kasoori methi

Make a paste of onion, tomatoes and cashew. In a pan add some refined oil. After that add the paste, along with ginger garlic paste. Later add all the powdered masala. keep cooking until oil seperates.
Add cream and salt and mix , add some water. let the water come to boil add kofta balls, which you fried. Now crush the roasted methi on top. Let the gravy be thick switch off the gas

Shufta a Kashmiri sweet dish



My today's craving is Shufta

Ingredients

1) paneer 250gms cut into cubes
2) ghee
3) almonds
4) coconut
5)kishmish
6) sugar syrup
7) lime juice.


Method: fry paneer in ghee till light golden brown, then make sugar syrup , soak almonds and take out the peel , cut coconut into pieces and also kishmish all the ingredients one bowl.

now put the fried paneer in sugar syrup add almonds, coconut and stir, now add raisins ( kish mish) keep stiring after some time add saffron and keep stiring until thick and caramelized. switch off the stove and garnish with elaichi powder and one tsp lime juice. let it cool serve.
